Ingredients

  • 4 large Bell peppers (red, yellow, or orange)
  • 8 ounces Cream cheese
  • 0.5 cups Parmesan cheese, grated
  • 0.5 cups Breadcrumbs
  • 2 tablespoons Fresh parsley, chopped
  • 2 cloves Garlic, minced
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 8 leaves Fresh basil leaves
  • 12 pieces Toothpicks or kitchen twine

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.

Step 2

Cut the bell peppers lengthwise into quarters and remove the seeds and membranes. Aim for wide, flat pieces that can be wrapped around the filling.

Step 3

Place the bell pepper pieces skin-side down on the prepared baking sheet. Drizzle with 1 tablespoon of olive oil and season with a pinch of salt and black pepper. Roast in the oven for 10 minutes, or until softened but not fully cooked. Remove and let cool slightly.

Step 4

In a mixing bowl, combine the cream cheese, Parmesan cheese, breadcrumbs, parsley, garlic, remaining olive oil, salt, and black pepper. Mix well until a smooth, spreadable filling forms.

Step 5

Take a roasted bell pepper piece and spread about 1 tablespoon of the filling onto the inside of the pepper. Lay a fresh basil leaf on top of the filling.

Step 6

Roll the pepper piece around the filling to form a tight bundle. Secure it with a toothpick or tie gently with kitchen twine. Repeat with the remaining ingredients.

Step 7

Place the bundles back onto the baking sheet seam-side down. Roast in the oven for an additional 5 minutes, or until the bundles are heated through and slightly golden on top.

Step 8

Remove from the oven and let cool for a few minutes before serving. Serve warm or at room temperature as an appetizer or side dish.
