Ingredients

  • 4 pieces red bell peppers
  • 4 pieces yellow bell peppers
  • 3 tablespoons extra virgin olive oil
  • 3 pieces garlic cloves
  • 28 ounces crushed tomatoes
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 0.5 teaspoons red pepper flakes
  • 8 pieces fresh basil leaves
  • 0.25 teaspoons ground black pepper

Directions

Step 1

Wash and dry the red and yellow bell peppers. Cut them in half lengthwise, remove the seeds and membranes, and slice them into 1-inch wide strips.

Step 2

Heat the olive oil in a large, deep skillet or saucepan over medium heat.

Step 3

Peel and thinly slice the garlic cloves. Add them to the hot oil and sauté for 1-2 minutes, or until fragrant and golden, but not burnt.

Step 4

Add the sliced bell peppers to the skillet. Stir well to coat them in the oil and garlic, and cook for 5-7 minutes, stirring occasionally, until they begin to soften.

Step 5

Pour in the crushed tomatoes and stir to combine. Add the salt, sugar, red pepper flakes, and black pepper. Stir again to incorporate all the seasoning.

Step 6

Lower the heat to medium-low, cover the skillet with a lid, and let the peppers simmer gently for 30 minutes. Stir occasionally to prevent sticking.

Step 7

After 30 minutes, taste the sauce and adjust seasonings if needed. Stir in the fresh basil leaves and let cook uncovered for an additional 5 minutes.

Step 8

Remove from heat and let the dish cool slightly before serving. Serve warm or at room temperature as a side dish, appetizer, or a topping for grilled meat, pasta, or crusty bread.
