Ingredients

  • 12 oz Pasta of your choice (penne or fusilli recommended)
  • 2 tbsp Olive oil
  • 3 cloves Garlic, minced
  • 2 cups Cherry tomatoes, halved
  • 4 cups Fresh spinach, chopped
  • 1 cup Feta cheese, crumbled
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 0.25 tsp Crushed red pepper flakes (optional)
  • 2 tbsp Fresh basil leaves, chopped (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set the pasta aside.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook, stirring, for about 1 minute, until fragrant.

Add the halved cherry tomatoes to the skillet. Cook for 3-4 minutes, stirring occasionally, until the tomatoes begin to soften and release their juices.
