Ingredients

  • 12 oz penne pasta
  • 2 tbsp olive oil
  • 4 medium garlic cloves
  • 2 cups cherry tomatoes
  • 15 oz canned white beans
  • 1 cup fresh basil leaves

  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 cup grated Parmesan cheese
  • 0.5 cup pasta cooking water

Directions

Step 1

Bring a large pot of salted water to a boil. Add the penne pasta and cook it according to the package instructions until al dente, about 10-12 minutes. Reserve 1/2 cup of pasta cooking water before draining, then set the pasta aside.

Step 2

While the pasta cooks, heat the olive oil in a large skillet over medium heat.

Finely mince the garlic cloves and add them to the skillet. Sauté for 1-2 minutes, stirring frequently, until fragrant but not browned.

Halve the cherry tomatoes and add them to the skillet. Cook for 5 minutes, stirring occasionally, until they soften and release their juices.
