Ingredients

  • 400 grams Penne pasta
  • 3 tablespoons Olive oil
  • 2 pieces Garlic cloves, minced
  • 1 medium Red bell pepper, diced
  • 1 medium Yellow bell pepper, diced
  • 150 grams Canned tuna in olive oil, drained
  • 400 grams Canned crushed tomatoes
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Crushed red chili flakes (optional)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper, freshly ground
  • 2 tablespoons Fresh parsley, chopped
  • 50 grams Parmesan cheese, grated (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to the package instructions until al dente. Reserve 1 cup of pasta water and then drain the pasta.

Step 2

While the pasta cooks, heat the olive oil in a large skillet over medium heat.

Step 3

Add the minced garlic and sauté for about 30 seconds, or until fragrant.

Step 4

Add the diced red and yellow bell peppers to the skillet and sauté for 5-6 minutes until softened.

Stir in the canned tuna, breaking it up gently with a spoon.

Add the crushed tomatoes, oregano, red chili flakes (if using), salt, and black pepper to the skillet. Simmer the sauce for 8-10 minutes, stirring occasionally.

If the sauce becomes too thick, add some of the reserved pasta water a little at a time until you reach the desired consistency.

Add the cooked pasta to the skillet and toss until well coated in the sauce.
