Ingredients

  • 300 grams penne pasta
  • 2 cans canned tuna (in olive oil or water, drained)
  • 1 piece red onion, medium
  • 3 tablespoons olive oil
  • 2 cloves garlic cloves, minced
  • 2 tablespoons lemon juice, freshly squeezed
  • 1 tablespoon capers, rinsed
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper, freshly ground
  • 0.25 teaspoon red chili flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Reserve 1/2 cup of the pasta cooking water before draining the pasta.

Step 2

While the pasta cooks, prepare the sauce. Thinly slice the red onion and set it aside.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the sliced red onion and sauté for 5-7 minutes, stirring occasionally, until softened and slightly caramelized.

Add the minced garlic to the skillet and cook for 1-2 minutes until fragrant, being careful not to burn it.
