  • 3 liters water

Directions

Step 1

Bring 3 liters of water to a rolling boil in a large pot. Add 1 teaspoon of salt and the penne pasta.

Step 2

Cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta cooking water, then drain the pasta and set aside.

Step 3

Meanwhile, heat olive oil in a large skillet over medium heat. Add minced garlic and crushed red pepper flakes, and sauté for 1-2 minutes until fragrant but not browned.

Stir in the tomato paste and cook for 1-2 minutes, allowing it to caramelize slightly.
