Ingredients

  • 300 grams penne pasta
  • 3 tablespoons extra virgin olive oil
  • 2 whole (minced) garlic cloves
  • 300 grams (halved) cherry tomatoes
  • 100 grams (sliced) black olives
  • 150 grams (crumbled) feta cheese
  • 10 leaves (chopped) fresh basil leaves
  • 0.5 teaspoons red chili flakes
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Bring a large pot of salted water to a boil and cook the penne pasta according to package instructions until al dente. Drain the pasta, reserving 1/2 cup of pasta water, and set aside.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

Step 3

Add the halved cherry tomatoes to the skillet and cook for 4-5 minutes, stirring occasionally, until they start to soften and release their juices.
