Ingredients

  • 12 oz penne pasta
  • 1 medium butternut squash
  • 3 tbsp olive oil
  • 3 garlic cloves
  • 1 tsp fresh rosemary
  • 1 tsp fresh sage
  • 1 cup Parmesan cheese
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp red pepper flakes
  • 2 cups water
  • 2 tbsp parsley

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 2

Peel and seed the butternut squash, then cut it into 1/2-inch cubes.

Step 3

Place the squash cubes on the prepared baking sheet, drizzle with 2 tablespoons of olive oil, and sprinkle with salt and black pepper. Toss to coat evenly.

Step 4

Roast the squash in the preheated oven for 25-30 minutes, stirring halfway through, until tender and slightly caramelized.

Step 5

While the squash roasts, bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water before draining the pasta.

Step 6

Mince the garlic and finely chop the rosemary, sage, and parsley.

Step 7

In a large skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.

Step 8

Add the roasted squash to the skillet, along with the chopped rosemary, sage, and red pepper flakes. Stir to combine.

Step 9

Add the cooked penne to the skillet and toss to coat, adding reserved pasta water as needed to create a light sauce.

Step 10

Stir in the grated Parmesan cheese until the pasta is well coated and creamy.

Step 11

Taste and adjust seasoning with additional salt and pepper if needed.

Step 12

Garnish with chopped parsley and serve immediately. Enjoy your delicious Penne with Squash!
