Ingredients

  • 12 oz penne pasta
  • 1 lb shrimp (peeled and deveined)
  • 2 tbsp olive oil
  • 4 cloves garlic (minced)
  • 1 tsp red pepper flakes
  • 28 oz canned crushed tomatoes
  • 2 tbsp tomato paste
  • 1 tsp dried oregano
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp fresh basil (chopped)
  • 0.25 cup grated Parmesan cheese (optional)
  • 1 large pot water (for boiling pasta)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the rest and set the pasta aside.

Step 2

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the shrimp in a single layer and cook for 2-3 minutes on each side, or until pink and opaque. Remove the shrimp from the skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil. Reduce the heat to medium-low and sauté the minced garlic and red pepper flakes for about 30 seconds, or until fragrant.

Step 4

Stir in the crushed tomatoes, tomato paste, oregano, salt, and black pepper. Simmer the sauce for 10 minutes, stirring occasionally, to allow the flavors to meld.
