Ingredients

  • 12 oz penne pasta
  • 1 lb Italian sausage (mild or spicy, casings removed)
  • 1 tbsp olive oil
  • 1 medium yellow onion (finely chopped)
  • 3 cloves garlic (minced)
  • 14 oz crushed tomatoes (canned)
  • 1 cup heavy cream
  • 1 cup parmesan cheese (grated)
  • 2 tbsp fresh basil leaves (chopped)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp red pepper flakes (optional, for spice)
  • 1 tbsp butter

Directions

Step 1

Bring a large pot of salted water to a boil over high heat. Add the penne pasta and cook according to the package instructions until al dente. Reserve 1/2 cup of the pasta cooking water, then drain the pasta and set aside.

Step 2

In a large skillet over medium heat, heat the olive oil. Add the Italian sausage and cook, breaking it up with a wooden spoon, until browned and fully cooked, about 5-7 minutes. Remove the cooked sausage from the skillet and set aside.

Step 3

In the same skillet, add the butter and allow it to melt. Add the chopped onion and sauté for 3-4 minutes, or until softened. Stir in the minced garlic and cook for 1 minute, stirring constantly to prevent burning.

Step 4

Pour in the crushed tomatoes and stir to combine. Allow the sauce to simmer for 5 minutes to let the flavors meld.

Step 5

Reduce the heat to low, then stir in the heavy cream. Cook for another 2 minutes while stirring gently. Add the grated parmesan cheese and stir until completely melted and the sauce becomes creamy.

Step 6

Return the cooked sausage to the skillet and mix it into the sauce. Add the salt, black pepper, and red pepper flakes (if using). Stir to combine.

Step 7

Add the cooked penne pasta to the skillet, tossing it with the sausage and sauce until well coated. If the sauce is too thick, add a bit of the reserved pasta water to reach your desired consistency.

Step 8

Remove the skillet from heat and stir in the chopped fresh basil.

Step 9

Serve the penne hot, topped with additional grated parmesan and fresh basil if desired. Enjoy!
