  • 400 grams penne pasta
  • 500 grams Italian sausage (mild or spicy)
  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic cloves, minced
  • 800 grams crushed tomatoes (canned)
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoons red pepper flakes
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 50 grams parmesan cheese, grated (optional for serving)
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Reserve 1 cup of pasta cooking water, then drain the pasta and set aside.

Step 2

Heat the olive oil in a large skillet or sauté pan over medium heat. Remove the casing from the Italian sausages and crumble them into the pan. Cook for 5-7 minutes, breaking the meat up with a wooden spoon, until browned and cooked through. Remove the sausage from the pan and set aside.

Step 3

In the same pan, add the chopped onion and sauté for 3-4 minutes, or until softened. Add the minced garlic and cook for an additional minute, stirring frequently to prevent burning.

Step 4

Stir in the crushed tomatoes, tomato paste, dried oregano, dried basil, red pepper flakes, salt, and black pepper. Bring the sauce to a simmer and let it cook for 10-15 minutes, stirring occasionally, until thickened.

Return the cooked sausage to the pan and mix it into the sauce. If the sauce becomes too thick, add a small amount of the reserved pasta cooking water to thin it out.

Add the cooked penne to the sauce and toss to coat evenly. Cook for an additional 2-3 minutes to allow the flavors to meld together.

Serve the penne with sausage hot, topped with grated parmesan cheese and fresh chopped parsley if desired.
