Ingredients

  • 400 grams penne pasta
  • 6 large Roma tomatoes
  • 3 tablespoons extra virgin olive oil
  • 4 large garlic cloves
  • 12 leaves fresh basil leaves
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 50 grams grated Parmesan cheese
  • 0.5 teaspoon crushed red pepper flakes
  • 4 liters water

Directions

Step 1

Bring 4 liters of water to a boil in a large pot. Add 1 teaspoon of salt to the water.

Step 2

Add the penne pasta to the boiling water and cook according to the package instructions, usually 10-12 minutes, until al dente.

Step 3

While the pasta cooks, dice the Roma tomatoes into small pieces, mince the garlic cloves, and finely chop half of the basil leaves. Set aside the remaining basil leaves for garnish.

In a large skillet, heat 3 tablespoons of extra virgin olive oil over medium heat.
