  • 12 oz penne pasta
  • 2 boneless, skinless chicken breasts
  • 1 head radicchio

Directions

Step 1

Preheat your oven to 400°F (200°C).

Rub the chicken breasts with 1 tablespoon olive oil, 0.5 teaspoon salt, and 0.25 teaspoon black pepper. Place on a baking sheet and roast in the oven for 20-25 minutes, or until cooked through (internal temperature of 165°F). Remove and let rest for 5 minutes, then slice thinly.

While the chicken cooks, bring a large pot of salted water to a boil. Cook the penne pasta according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.
