Ingredients

  • 12 oz penne pasta
  • 1 head cauliflower
  • 4 tbsp olive oil
  • 4 garlic cloves
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 cup Parmesan cheese, grated
  • 2 tbsp fresh parsley, chopped
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp red pepper flakes (optional)

Directions

Step 1

Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper.

Step 2

Cut the cauliflower into bite-sized florets and place them on the baking sheet.

Step 3

Drizzle 2 tablespoons of olive oil over the cauliflower, and season with 1/4 teaspoon of salt and 1/8 teaspoon of black pepper. Toss to coat evenly.

Roast the cauliflower in the preheated oven for 25-30 minutes, turning halfway, until golden brown and tender.

Meanwhile, bring a large pot of salted water to a boil. Cook the penne pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water before draining the pasta.
