  • 12 oz penne pasta
  • 1 cup pumpkin puree

  • 0.25 tsp ground cinnamon
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp fresh sage leaves, chopped
  • 0.25 tsp optional: red pepper flakes

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Reserve 1/2 cup of pasta cooking water, then drain the pasta and set aside.

Step 2

In a large skillet, heat the olive oil and butter over medium heat until melted. Add the minced garlic and chopped shallot, and cook, stirring occasionally, until fragrant and softened, about 2 minutes.

Stir in the pumpkin puree, vegetable broth, ground nutmeg, ground cinnamon, salt, and black pepper. If using, add the red pepper flakes for a hint of heat. Cook for 3-4 minutes, stirring occasionally, until the mixture is warmed through and slightly thickened.
