Ingredients

  • 400 g penne pasta
  • 2 tbsp olive oil
  • 2 garlic cloves
  • 400 g crushed tomatoes
  • 120 ml heavy cream
  • 50 g grated Parmesan cheese
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp red pepper flakes (optional)
  • 5 fresh basil leaves
  • 60 ml pasta cooking water

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to the package instructions until al dente. Reserve 60 ml of the pasta cooking water, then drain the pasta and set aside.

Step 2

While the pasta cooks, finely mince the garlic cloves and chop the fresh basil leaves.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 30 seconds to 1 minute, or until fragrant but not browned.

Step 4

Add the crushed tomatoes to the skillet and stir well. Bring the mixture to a gentle simmer and cook for 5-7 minutes to allow the flavors to meld.

Step 5

Stir in the heavy cream and allow the sauce to heat through, turning a light pink color. Season with salt, black pepper, and red pepper flakes if desired.

Step 6

Add the grated Parmesan cheese to the sauce and stir until melted and fully incorporated. If the sauce is too thick, stir in the reserved pasta cooking water a little at a time to reach your desired consistency.

Step 7

Toss the cooked penne pasta in the rosy tomato sauce until well coated. Allow the pasta to cook in the sauce for 1-2 minutes.

Step 8

Remove the skillet from heat and garnish with chopped fresh basil leaves. Serve immediately with additional Parmesan cheese on the side if desired.
