Ingredients

  • 400 grams penne pasta
  • 150 grams Gorgonzola Dolce cheese
  • 150 grams pancetta
  • 200 grams asparagus
  • 200 ml heavy cream
  • 50 grams Parmesan cheese
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • 0 to taste salt
  • 0 to taste black pepper
  • 5 leaves fresh basil leaves

Directions

Step 1

Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

Step 2

While the pasta cooks, prepare the asparagus by trimming the woody ends and slicing the spears into 2-inch pieces.

Heat the olive oil in a large skillet over medium heat. Add the diced pancetta and cook until crispy and golden brown, about 5-7 minutes. Remove the pancetta with a slotted spoon and set it aside on a plate lined with paper towels.

In the same skillet, add the minced garlic and asparagus pieces. Sauté for 3-4 minutes until the asparagus is tender but still crisp.
