Ingredients

  • 12 oz penne pasta
  • 8 oz chorizo sausage (sliced)
  • 4 cups kale (washed and roughly chopped)
  • 2 tbsp olive oil
  • 1 medium yellow onion (finely diced)
  • 3 cloves garlic cloves (minced)
  • 0.5 tsp crushed red pepper flakes (optional)
  • 1.5 cups cherry tomatoes (halved)
  • 0.5 cup chicken or vegetable stock
  • 0.5 cup parmesan cheese (grated)
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Cook the penne pasta in a large pot of salted boiling water according to package instructions, until al dente. Reserve 1/2 cup of pasta water and drain the rest. Set the pasta aside.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced chorizo and cook for 5-6 minutes until browned and slightly crispy. Transfer the chorizo to a plate and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the diced onion and cook for 3-4 minutes, stirring occasionally, until softened and translucent.

Step 4

Add the minced garlic and crushed red pepper flakes (if using) to the skillet and cook for 1 additional minute, stirring constantly, until fragrant.

Step 5

Stir in the halved cherry tomatoes and cook for 4-5 minutes, until they begin to soften and release their juices.

Add the chopped kale to the skillet. Pour in the chicken or vegetable stock and stir to combine. Cook for 5-6 minutes, until the kale is wilted.
