Ingredients

  • 12 oz penne pasta
  • 2 pieces chicken breast (boneless, skinless)
  • 2 tbsp olive oil

  • 2 cups milk (whole or 2%)
  • 1 cup heavy cream
  • 2 cups Pepper Jack cheese (shredded)
  • 0.5 cup parmesan cheese (grated)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 2 tbsp fresh parsley (chopped, for garnish)

Directions

Step 1

Cook the penne pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set the pasta aside.

While the pasta is cooking, season the chicken breasts with salt, black pepper, and paprika on both sides.
