Ingredients

  • 12 oz penne pasta
  • 1 lb boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 14 oz jarred artichoke hearts, drained and quartered
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 0.5 cup Parmesan cheese, grated
  • 2 tbsp fresh parsley, chopped
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp red pepper flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Drain the pasta, reserving 1/2 cup of pasta water, and set aside.

Step 2

While the pasta cooks, slice the chicken breasts into bite-sized pieces and season with salt and black pepper.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes, or until cooked through and slightly browned. Remove the chicken from the skillet and set it aside.

Step 4

In the same skillet, add the remaining 1 tablespoon of olive oil. Sauté the chopped onion for 3-4 minutes until softened, then add the minced garlic and cook for 1 minute until fragrant.

Season with additional salt, black pepper, and red pepper flakes (if using), to taste.
