Ingredients

  • 12 oz Penne pasta
  • 15 oz Cannellini beans, canned
  • 3 tbsp Olive oil
  • 4 cloves Garlic, minced
  • 1.5 cups Cherry tomatoes, halved
  • 3 cups Fresh spinach
  • 0.5 cup Vegetable broth
  • 0.25 tsp Red pepper flakes
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 0.25 cup Parmesan cheese, grated (optional)
  • 2 tbsp Fresh basil, chopped (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne according to the package instructions until al dente. Reserve 1/2 cup of the pasta cooking water, then drain the pasta and set aside.

Step 2

While the pasta is cooking, drain and rinse the cannellini beans under cold water. Set them aside.

Step 3

In a large skillet or sauté pan, heat the olive oil over medium heat.

Add the minced garlic to the pan and sauté for 1-2 minutes until fragrant, being careful not to burn it.
