Ingredients

  • 400 g penne pasta
  • 300 g Brussels sprouts
  • 200 g bacon
  • 2 tbsp olive oil
  • 2 garlic cloves
  • 0.5 tsp red chili flakes (optional)
  • 50 g grated Parmesan cheese
  • 1 tbsp butter
  • 1 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water before draining and set aside.

Step 2

While the pasta is cooking, prepare the Brussels sprouts. Trim the ends, remove any outer leaves that are browned, and slice them thinly.

Step 3

Heat a large skillet over medium heat. Add the bacon and cook until crisp, about 6-8 minutes. Transfer the cooked bacon to a plate lined with paper towels, leaving the rendered fat in the skillet.

Step 4

In the same skillet with the bacon fat, add 2 tablespoons of olive oil. Lower the heat to medium and stir in the garlic, finely minced, and the red chili flakes, if using. Cook for 1-2 minutes until fragrant.

Add the sliced Brussels sprouts to the skillet and sauté for 5-7 minutes, stirring occasionally, until they are tender and slightly caramelized.
