Ingredients

  • 400 grams penne pasta
  • 2 tablespoons olive oil
  • 250 grams ground beef
  • 1 medium onion, diced
  • 3 cloves garlic cloves, minced
  • 400 grams crushed tomatoes (canned)
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 0.5 teaspoon red chili flakes (optional)
  • 50 grams parmesan cheese, grated
  • 100 grams fresh arugula
  • 0 to taste salt
  • 0 to taste black pepper
  • 0.5 cup reserved pasta water

Directions

Step 1

Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

Step 2

In a large skillet or sauté pan, heat the olive oil over medium-high heat. Add the ground beef and cook, breaking it up with a wooden spoon, until browned and fully cooked, about 5-6 minutes.

Step 3

Add the diced onion to the skillet and cook until softened, about 3 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 4

Stir in the crushed tomatoes, tomato paste, dried oregano, and red chili flakes (if using). Season with salt and black pepper to taste. Lower the heat to medium-low and let the sauce simmer for 10 minutes, stirring occasionally.
