Ingredients

  • 400 grams penne pasta
  • 300 grams asparagus
  • 2 tablespoons olive oil
  • 2 garlic cloves
  • 200 milliliters heavy cream
  • 50 grams grated Parmesan cheese
  • 1 teaspoon lemon zest
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons fresh parsley
  • 4 liters water
  • 1 tablespoon salt (for boiling pasta)

Directions

Step 1

Bring 4 liters of water to a boil in a large pot, add 1 tablespoon of salt, and cook the penne pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water before draining, then set the pasta aside.

Step 2

While the pasta cooks, trim the tough ends off the asparagus and cut the stems into 1-inch pieces, keeping the tips intact. Reserve a few asparagus tips for garnish, if desired.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the garlic cloves (minced) and sauté for about 1 minute until fragrant, being careful not to burn them.

Step 4

Add the chopped asparagus to the skillet and cook for 4-5 minutes, stirring occasionally, until the asparagus is tender but still bright green.

Step 5

Transfer the cooked asparagus (except the reserved tips) and garlic to a blender or food processor. Add the heavy cream, 30 grams of the grated Parmesan cheese, the lemon zest, salt, and black pepper. Blend until smooth, adding a splash of reserved pasta water to reach your desired sauce consistency.

Step 6

Pour the asparagus sauce back into the skillet and heat over low heat. Stir in the cooked penne pasta, tossing to combine and coat evenly in the sauce. Add additional reserved pasta water, if needed, to loosen the sauce.

Step 7

Serve the pasta on plates or in a large serving bowl. Garnish with the reserved asparagus tips, remaining grated Parmesan cheese, and freshly chopped parsley.

Step 8

Serve hot and enjoy your Penne with Asparagus Sauce!
