Ingredients

  • 12 oz Penne pasta
  • 1 lb Asparagus
  • 2 tbsp Olive oil
  • 3 cloves Garlic cloves
  • 1 tbsp Lemon zest
  • 2 tbsp Lemon juice
  • 1 cup Heavy cream
  • 1 cup Parmesan cheese (grated)
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Fresh parsley (chopped, optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Reserve 1 cup of the pasta cooking water, then drain and set the pasta aside.

Step 2

While the pasta cooks, prepare the asparagus: Trim the woody ends and cut the remaining stalks into 2-inch pieces.

Heat the olive oil in a large skillet over medium heat. Add the asparagus and sauté for 4-5 minutes, until tender but still crisp.

Mince the garlic cloves and add them to the skillet. Cook for an additional 1-2 minutes, stirring frequently, until fragrant.
