Ingredients

  • 12 oz penne pasta
  • 1 lb asparagus
  • 2 tbsp butter

  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 cup Parmesan cheese, grated
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp olive oil
  • 2 tbsp fresh parsley, chopped (optional for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set the pasta aside.

While the pasta cooks, prepare the asparagus by trimming the woody ends and cutting the spears into 1-inch pieces.
