Ingredients

  • 400 g Penne pasta
  • 120 ml Basil pesto
  • 200 ml Heavy cream
  • 50 g Parmesan cheese
  • 20 g Unsalted butter
  • 2 Garlic cloves
  • 400 g Crushed tomatoes
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 10 Fresh basil leaves

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to the package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

Step 2

In a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

Step 3

Add the crushed tomatoes into the saucepan. Stir in 1/4 teaspoon of salt and black pepper. Let the tomato sauce simmer for 10 minutes on low heat. Stir occasionally and set aside.

In a separate small saucepan, melt the butter over medium heat. Add the heavy cream and bring to a gentle simmer. Gradually whisk in the grated Parmesan cheese until smooth. Cook for 3-4 minutes, then remove from heat.
