Ingredients

  • 400 grams penne pasta
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 4 large garlic cloves
  • 1 medium yellow onion
  • 1 medium red bell pepper
  • 1 medium zucchini
  • 200 grams cherry tomatoes
  • 1 cup heavy cream
  • 1 cup chicken or vegetable broth
  • 1.5 cups grated parmesan cheese
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon red chili flakes
  • 10 leaves fresh basil leaves

Directions

Step 1

Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

Step 2

While the pasta cooks, prepare the vegetables. Mince the garlic, finely chop the onion, dice the red bell pepper and zucchini into bite-sized pieces, and halve the cherry tomatoes.

Step 3

Heat the olive oil and butter in a large skillet or sauté pan over medium heat. Add the minced garlic and chopped onion, cooking until fragrant and translucent, about 3 minutes.

Add the diced red bell pepper and zucchini to the skillet. Cook for 5-6 minutes, stirring occasionally, until the vegetables are tender but still slightly crisp.
