Ingredients

  • 250 grams penne pasta
  • 200 grams asparagus
  • 100 grams fresh spinach leaves
  • 50 grams raw cashews
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 clove garlic clove
  • 30 grams grated Parmesan cheese
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to the package instructions until al dente. Drain and set aside.

Step 2

While the pasta is cooking, rinse the asparagus and trim off the woody ends. Cut the asparagus into 2-inch pieces.

Step 3
