Ingredients

  • 400 g penne rigate
  • 2 pieces chicken breast
  • 2 tbsp olive oil
  • 3 pieces garlic cloves
  • 1 medium onion
  • 200 ml heavy cream
  • 100 ml chicken broth
  • 50 g parmesan cheese, grated
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 0.5 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley, chopped
  • 3 L water (for boiling pasta)

Directions

Step 1

Fill a large pot with 3 liters of water and bring it to a boil. Add a pinch of salt to the water.

Step 2

Once the water is boiling, add the penne rigate and cook according to the package instructions (around 10-12 minutes) until al dente. Drain and set aside.

Step 3

While the pasta is cooking, dice the chicken breasts into bite-sized pieces. Season with 0.5 tsp of salt, 0.25 tsp of black pepper, and the paprika.

Finely chop the onion and garlic cloves.

In a large skillet, heat 2 tbsp of olive oil over medium-high heat. Add the chicken pieces and cook until they are golden brown and fully cooked, about 6-8 minutes. Remove the chicken from the skillet and set aside.

In the same skillet, add the chopped onion and cook for 3-4 minutes until translucent. Stir in the garlic and cook for an additional 1 minute until fragrant.
