Ingredients

  • 300 grams penne pasta
  • 250 grams cherry tomatoes
  • 100 grams blue cheese
  • 3 tablespoons olive oil
  • 2 units garlic cloves
  • 10 leaves fresh basil leaves
  • 2 tablespoons fresh parsley
  • 0.5 teaspoons red chili flakes
  • 1 teaspoons salt
  • 0.5 teaspoons black pepper
  • 30 grams parmesan cheese (optional for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Reserve 1/2 cup of the pasta cooking water, then drain the pasta and set aside.

Step 2

Meanwhile, heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 3

Mince the garlic cloves and add them to the skillet. Sauté for about 1 minute until fragrant, being careful not to let the garlic burn.

Halve the cherry tomatoes and add them to the skillet. Cook for 5–7 minutes, stirring occasionally, until the tomatoes start to soften and release their juices.

Tear or chop the fresh basil leaves and parsley, then stir them into the skillet with the tomatoes. Add the red chili flakes, salt, and black pepper, and cook for another 2 minutes.
