Ingredients

  • 1 400-gram can canned clams with juice
  • 120 milliliters dry white wine
  • 120 milliliters heavy cream
  • 50 grams Parmesan cheese, grated
  • 100 grams Mozzarella cheese, shredded
  • 2 tablespoons fresh parsley, chopped
  • 0 to taste salt
  • 0 to taste black pepper
  • 0.5 teaspoons red pepper flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to the package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

In a large skillet, heat the olive oil and butter over medium heat until the butter melts.

Add the minced garlic and chopped shallot to the skillet. Sauté for 2-3 minutes until fragrant and softened.
