Ingredients

  • 12 ounces Penne pasta
  • 1 medium Red bell pepper
  • 1 medium Yellow bell pepper

  • 3 tablespoons Olive oil
  • 3 large Garlic cloves
  • 0.5 teaspoons Crushed red pepper flakes
  • 0.25 cups Fresh basil leaves
  • 0.5 cups Parmesan cheese (grated)
  • 1 teaspoons Salt
  • 0.5 teaspoons Ground black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to the package instructions until al dente. Drain and set aside, reserving 1/4 cup of pasta water.

Step 2

While the pasta is cooking, wash all the bell peppers thoroughly. Remove the stems, seeds, and membranes, then slice them into thin strips.

Peel and finely mince the garlic cloves.

In a large skillet or sauté pan, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, but not browned.
