Ingredients

  • 400 grams penne pasta
  • 2 pieces chicken breast
  • 2 tablespoons olive oil
  • 3 cloves garlic
  • 1 medium onion
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente, then drain and set aside.

Step 2

While the pasta is cooking, cut the chicken breasts into bite-sized pieces. Season the chicken pieces with salt and black pepper.

Step 3

In a large skillet, heat olive oil over medium heat. Add the seasoned chicken pieces and cook until they are golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

Step 4

In the same skillet, add more olive oil if needed, then add the minced garlic and chopped onion. Sauté until the onion becomes translucent and soft, about 3 minutes.

Step 5

Pour in the chicken broth, stirring to deglaze the pan. Add the heavy cream and bring the mixture to a simmer.

Step 6

Stir in the grated Parmesan cheese and Italian seasoning, then reduce the heat to low and let the sauce thicken slightly.

Step 7

Return the cooked chicken to the skillet, along with the cooked penne pasta. Toss everything together to coat the pasta and chicken evenly with the sauce.

Step 8

Taste and adjust the seasoning with additional salt and pepper if necessary.

Step 9

Garnish with chopped fresh parsley before serving.
