Ingredients

  • 12 oz penne pasta
  • 2 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 2 cups low-fat milk
  • 4 oz reduced-fat cream cheese
  • 1 cup Parmesan cheese, grated
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley, chopped
  • 0.5 cup reserved pasta water

Directions

Step 1

Bring a large pot of salted water to a boil and cook the penne pasta according to the package instructions until al dente. Before draining, reserve 1/2 cup of pasta water. Drain the pasta and set it aside.

Step 2

In a large skillet or saucepan, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes, stirring constantly, until fragrant but not browned.

Step 3

Sprinkle the flour over the garlic and whisk continuously for 1 minute to form a roux.

Step 4

Gradually pour in the low-fat milk while whisking to combine. Continue to cook, stirring often, until the sauce thickens, about 3-4 minutes.

Step 5

Reduce the heat to low and add the cream cheese, stirring until fully melted and incorporated into the sauce.

Step 6

Stir in the grated Parmesan cheese, salt, and black pepper. Mix well until the cheese is melted and the sauce is smooth. If the sauce is too thick, gradually add reserved pasta water a little at a time until the desired consistency is reached.

Step 7

Add the cooked penne pasta to the skillet and toss to coat evenly with the sauce.

Step 8

Sprinkle the chopped fresh parsley over the pasta and gently toss to combine.

Step 9

Serve immediately, garnished with additional grated Parmesan cheese and parsley if desired. Enjoy!
