Ingredients

  • 400 grams penne pasta
  • 3 tablespoons olive oil
  • 3 garlic cloves
  • 1 teaspoon red chili flakes
  • 400 grams crushed tomatoes
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 10 fresh basil leaves
  • 50 grams grated Parmesan cheese
  • 4 liters water
  • 2 tablespoons salt (for boiling pasta)

Directions

Step 1

Bring 4 liters of water to a boil in a large pot. Add 2 tablespoons of salt to the water, then add the penne pasta. Cook according to package instructions until al dente, usually about 9-11 minutes.

Step 2

While the pasta is cooking, heat 3 tablespoons of olive oil in a large skillet over medium heat.

Step 3

Finely mince the garlic cloves and add them to the skillet. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.

Add 1 teaspoon of red chili flakes to the garlic and stir for 30 seconds to infuse the oil with spice.

Pour in 400 grams of crushed tomatoes and stir well. Season with 1 teaspoon of salt and 0.5 teaspoon of black pepper. Let the sauce simmer for 8-10 minutes, stirring occasionally.

Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the rest.

Add the drained pasta to the skillet with the tomato sauce. If the sauce seems too thick, add a bit of the reserved pasta water to loosen it up.

Toss the pasta in the sauce until well coated. Remove the skillet from heat.
