  • 12 oz smoked sausage

  • 1 tsp dried Italian seasoning

  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp, chopped fresh parsley
  • 4 qt water
  • 1 tbsp salt (for pasta water)

Directions

Step 1

Fill a large pot with 4 quarts of water, add 1 tablespoon of salt, and bring it to a boil over high heat.

Step 2

Add the penne pasta to the boiling water and cook according to package instructions until al dente. Drain and set aside.

While the pasta cooks, slice the smoked sausage into 1/4-inch rounds.

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced sausage and cook for 5-6 minutes until browned. Remove the sausage from the skillet and set aside.
