Ingredients

  • 400 grams Penne pasta
  • 2 tablespoons Olive oil
  • 2 Shallots, finely chopped
  • 3 Garlic cloves, minced
  • 60 ml Vodka
  • 400 grams Canned crushed tomatoes
  • 120 ml Heavy cream
  • 150 grams Smoked salmon, chopped
  • 0.5 teaspoons Red chili flakes
  • 1 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 50 grams Parmesan cheese, grated
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set the pasta aside.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the chopped shallots and sauté for 2–3 minutes until softened.

Add the minced garlic to the skillet and cook for about 30 seconds until fragrant, being careful not to let it burn.

Pour the vodka into the skillet and cook for 2–3 minutes to allow the alcohol to evaporate.

Stir in the crushed tomatoes and red chili flakes. Simmer the sauce for 5–7 minutes, allowing the flavors to meld together.

Lower the heat to medium-low and stir in the heavy cream. Simmer for 2 more minutes, then add the smoked salmon, cooking just until heated through.
