Ingredients

  • 400 g penne pasta
  • 30 g dried porcini mushrooms
  • 30 g unsalted butter
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 shallot, finely diced
  • 100 ml dry white wine
  • 200 ml heavy cream
  • 50 g grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • 0 to taste salt
  • 0 to taste black pepper
  • 120 ml reserved pasta cooking water

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta until al dente according to the package instructions. Reserve 120 ml of the pasta cooking water, then drain and set the pasta aside.

Step 2

While the pasta cooks, soak the dried porcini mushrooms in 250 ml of warm water for 10 minutes to rehydrate. Once softened, remove the mushrooms, finely chop them, and strain the soaking liquid through a fine mesh sieve to remove any grit. Set both the mushrooms and liquid aside.

Step 3

In a large skillet or saucepan, melt the butter with the olive oil over medium heat. Add the minced garlic and diced shallot, cooking until softened and fragrant, about 2-3 minutes.

Step 4

Stir in the chopped porcini mushrooms and cook for another 2 minutes. Pour in the white wine and allow it to simmer until reduced by half, about 3-4 minutes.

Step 5

Lower the heat to medium-low and add the reserved mushroom soaking liquid, stirring well. Let it simmer for 2 minutes, then pour in the heavy cream. Cook gently for 5 minutes, stirring occasionally, until the sauce thickens slightly.

Stir in the Parmesan cheese and season with salt and black pepper to taste. Add the cooked penne to the skillet, tossing to coat the pasta evenly in the sauce. If the sauce is too thick, gradually add the reserved pasta cooking water until you reach your desired consistency.

Step 7

Remove from heat and sprinkle the chopped parsley over the pasta. Toss gently to combine.
