Ingredients

  • 12 oz penne pasta
  • 2 cups broccoli florets
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 small yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 0.5 tsp crushed red pepper flakes
  • 1 cup tomato paste
  • 0.5 cup vodka
  • 1 cup heavy cream
  • 0.5 cup grated Parmesan cheese
  • 2 tbsp fresh basil leaves, chopped
  • 0 to taste salt
  • 0 to taste black pepper
  • 1 cup pasta cooking water

Directions

Step 1

Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Reserve 1 cup of the pasta cooking water, then drain the pasta and set aside.

Step 2

In the same pot of boiling water, add the broccoli florets and blanch for 2-3 minutes until bright green and tender-crisp. Drain and set aside.

In a large skillet or sauté pan, heat the olive oil and butter over medium heat.

Add the finely chopped onion and sauté for 3-4 minutes until softened and translucent.

Add the minced garlic and red pepper flakes, and cook for 1 minute until fragrant.
