  • 2 pounds Penn Cove mussels
  • 1.5 cups Orange juice

  • 2 whole Shallots
  • 4 whole Garlic cloves
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 0.5 cups White wine
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 loaf Crusty bread (optional, for serving)

Directions

Step 1

Thoroughly rinse and scrub the Penn Cove mussels under cold water. Remove any beards by pulling them away from the shells with your fingers. Discard any mussels that remain open after tapping them lightly on the counter.

Peel and finely chop the shallots and garlic cloves. Set them aside.
