Ingredients

  • 500 grams All-purpose flour
  • 2 large Eggs
  • 200 milliliters Water
  • 1.5 teaspoons Salt
  • 250 grams Ground beef
  • 250 grams Ground pork
  • 1 medium, finely chopped or grated Onion
  • 2 cloves, minced Garlic
  • 0.5 teaspoons Ground black pepper
  • 2 tablespoons (for serving, optional) Butter or sour cream
  • 2 tablespoons (for serving, optional) Chopped fresh dill or parsley

Directions

Step 1

In a large bowl, combine the flour and 1 teaspoon of salt. Create a well in the center and add the eggs.

Step 2

Gradually mix the eggs into the flour, then slowly pour in the water. Knead the mixture into a smooth dough. Cover the dough with plastic wrap or a kitchen towel and let it rest for 30 minutes.

Step 3

In another bowl, combine the ground beef, ground pork, onion, garlic, 0.5 teaspoons of salt, and ground black pepper. Mix until the filling is well combined.

Step 4

On a floured surface, roll out the dough into a thin sheet (about 1-2 mm thickness). Use a round cutter (around 7 cm in diameter) to cut out circular shapes from the dough.

Step 5

Place a teaspoon of the meat filling in the center of each circle. Fold the dough over the filling to create a half-moon shape, pinching the edges to seal tightly. Bring the corners of the half-moon together and pinch to form a traditional pelmeni shape. Repeat with the remaining dough and filling.

Step 6

Bring a large pot of salted water to a boil. Add the prepared pelmeni in batches, stirring gently to prevent sticking. Cook for 6-8 minutes, or until the pelmeni float to the surface and the filling is fully cooked.

Step 7

Remove the pelmeni with a slotted spoon and transfer them to a serving dish. Optionally, toss with butter or serve with sour cream and a sprinkle of fresh dill or parsley.

Step 8

Enjoy the pelmeni warm as a hearty and comforting meal.
