Ingredients

  • 1 unit Whole chicken (approximately 4 lbs)
  • 1 tablespoon Salt
  • 1 teaspoon Chinese five-spice powder
  • 4 tablespoons Hoisin sauce
  • 2 tablespoons Soy sauce
  • 1 tablespoon Honey
  • 1 teaspoon Sesame oil
  • 1 tablespoon Rice vinegar
  • 4 stalks Scallions (green onions)
  • 1 unit Cucumber
  • 12 units Mandarin pancakes (or small flour tortillas)
  • 2 tablespoons Vegetable oil

Directions

Step 1

Preheat the oven to 375°F (190°C). Line a roasting pan with foil and place a wire rack on top.

Step 2

Pat the chicken dry with paper towels and trim any excess fat. Rub the chicken all over with salt and Chinese five-spice powder, including under the skin if possible.

Step 3

Place the chicken on the wire rack, breast side up, and roast in the preheated oven for 60-70 minutes, until the skin begins to turn golden brown.

Step 4

While the chicken is roasting, prepare the glaze by combining hoisin sauce, soy sauce, honey, sesame oil, and rice vinegar in a small bowl. Stir until smooth and set aside.

Step 5

After 60-70 minutes of roasting, remove the chicken from the oven and brush it generously with the glaze. Increase the oven temperature to 425°F (220°C) and return the chicken to the oven.

Step 6

Roast for an additional 15-20 minutes, basting with more glaze halfway through, until the skin is crispy and caramelized and the internal temperature of the chicken reaches 165°F (74°C).

Step 7

Let the chicken rest for 10-15 minutes before carving.

Step 8

Meanwhile, thinly slice the scallions and cucumber. Warm the mandarin pancakes (or small tortillas) according to package instructions.

Step 9

Carve the chicken into thin slices and serve with the warm pancakes, sliced scallions, and cucumber. Optionally, serve extra hoisin sauce on the side for dipping.
