Ingredients

  • 500 grams Pork tenderloin
  • 100 grams Cornstarch
  • 1 large Egg
  • 2 tablespoons Soy sauce
  • 1 tablespoon Shaoxing wine (optional)
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 0.5 teaspoons Ground white pepper
  • 500 milliliters Vegetable oil (for frying)
  • 2 tablespoons Hoisin sauce
  • 1 tablespoon Honey
  • 1 tablespoon Rice vinegar
  • 1 tablespoon Ketchup
  • 1 teaspoon Sesame oil
  • 1 stalk Green onions (sliced)
  • 1 tablespoon Sesame seeds

Directions

Step 1

Cut the pork tenderloin into bite-sized cubes and place them in a medium bowl.

Step 2

Add soy sauce, Shaoxing wine (if using), garlic powder, salt, and white pepper to the pork. Mix well to coat the pork evenly, then let it marinate for 10 minutes.

Step 3

In a small bowl, whisk the egg and pour it over the marinated pork. Stir until each piece is coated in egg.

Step 4

Spread the cornstarch on a shallow plate. Dredge each piece of pork in the cornstarch, ensuring a light and even coating. Shake off any excess.

Step 5

Heat the vegetable oil in a deep skillet or wok over medium-high heat. Once the oil is hot (around 180°C or 350°F), fry the pork pieces in batches to avoid overcrowding the pan. Cook for 4-5 minutes per batch, or until the pork is golden and cooked through.

Step 6

Remove the pork from the oil using a slotted spoon and place it on a plate lined with paper towels to drain any excess oil.

Step 7

In a separate pan, combine hoisin sauce, honey, rice vinegar, ketchup, and sesame oil. Heat over medium-low heat, stirring frequently until the sauce thickens slightly (about 2-3 minutes).

Step 8

Add the crispy pork bites to the pan with the sauce. Toss to coat the pork evenly in the glaze.

Step 9

Transfer the Peking Pork Bites to a serving platter. Garnish with sliced green onions and sesame seeds.

Step 10

Serve immediately as an appetizer or alongside steamed rice and vegetables for a complete meal.
