Ingredients

  • 2.5 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 1 cup Unsalted butter (softened)
  • 1.75 cups Granulated sugar
  • 4 large Eggs
  • 2 tablespoons Freshly grated lemon zest
  • 0.33 cup Fresh lemon juice
  • 0.75 cup Whole milk
  • 1.5 cups Powdered sugar (for glaze)
  • 2 tablespoons Fresh lemon juice (for glaze)
  • 1 tablespoon Unsalted butter (melted, for glaze)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan or a bundt pan with butter. Dust lightly with flour, tapping out the excess.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, use a hand or stand mixer to cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.

Step 4

Add the eggs one at a time to the butter-sugar mixture, mixing well after each addition. Stir in the lemon zest and lemon juice.

Step 5

Alternate adding the dry ingredients and milk into the wet mixture in three parts, starting and ending with the dry ingredients. Mix just until combined after each addition; do not overmix.

Step 6

Pour the batter evenly into the prepared pan and smooth the top with a spatula. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted in the center comes out clean.

Step 7

Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, carefully transfer the cake to a wire rack to cool completely.

Step 8

While the cake cools, prepare the glaze by whisking together the powdered sugar, lemon juice, and melted butter until smooth.

Step 9

Once the cake has cooled, drizzle the glaze evenly over the top. Let the glaze set for 15-20 minutes before serving.

Step 10

Slice and serve this refreshing lemon cake at room temperature. Enjoy!
