Ingredients

  • 226 grams Unsalted butter
  • 100 grams Granulated sugar
  • 50 grams Brown sugar (packed)
  • 1 large Egg yolk
  • 2 teaspoons Vanilla extract
  • 280 grams All-purpose flour
  • 0.5 teaspoons Salt
  • 120 grams Pecan pieces (finely chopped)
  • 120 grams Powdered sugar
  • 2 tablespoons Milk
  • 0.5 teaspoons Vanilla extract (for icing)

Directions

Step 1

Preheat your oven to 175°C (350°F) and prepare two baking sheets by lining them with parchment paper or silicone baking mats.

Step 2

In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar using a hand mixer or stand mixer on medium speed until light and fluffy, about 2 minutes.

Step 3

Add the egg yolk and 2 teaspoons of vanilla extract to the creamed mixture. Beat until well combined.

Step 4

In a separate bowl, whisk together the all-purpose flour and salt.

Step 5

Gradually add the dry ingredients to the wet mixture, mixing until a dough forms. If the dough feels too sticky to handle, refrigerate it for 10-15 minutes.

Step 6

Place the finely chopped pecan pieces in a shallow bowl.

Step 7

Scoop out 1 tablespoon of dough (about 20 grams) and roll it into a ball. Roll each ball in the pecans to coat the surface evenly.

Step 8

Place the pecan-coated dough balls onto the prepared baking sheets, spacing them about 2 inches apart.

Step 9

Using your thumb or the back of a spoon, press a small indentation into the center of each cookie.

Step 10

Bake the cookies in the preheated oven for 13-15 minutes, or until the edges are lightly golden. Remove from the oven and allow them to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 11

While the cookies cool, prepare the icing by whisking together the powdered sugar, milk, and 0.5 teaspoons of vanilla extract in a small bowl. Adjust the consistency by adding more milk (a drop at a time) if the icing is too thick.

Step 12

Once the cookies are fully cooled, spoon or pipe the icing into the indentations of each cookie.

Step 13

Let the icing set for at least 30 minutes before serving or storing. Enjoy!
