Ingredients

  • 6 pieces Large eggs
  • 3 tablespoons Mayonnaise
  • 1 teaspoon Dijon mustard
  • 2 tablespoons Pecans, finely chopped
  • 1 tablespoon Fresh parsley, finely chopped
  • 1 teaspoon Lemon juice
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0.25 teaspoons Paprika (for garnish)
  • 6 pieces Pecan halves (optional, for garnish)

Directions

Step 1

Place the eggs in a saucepan and cover with water. Bring to a boil over medium-high heat.

Step 2

Once the water reaches a rolling boil, turn off the heat, cover the saucepan with a lid, and let the eggs sit for 10 minutes.

Step 3

After 10 minutes, transfer the eggs to a bowl of ice water to cool for 5 minutes. This will make them easier to peel.

Step 4

Carefully peel the eggs and slice them in half lengthwise. Remove the yolks and place them in a mixing bowl.
