Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons brown sugar
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoons ground nutmeg
  • 0.5 teaspoons salt
  • 0.5 cup cold unsalted butter
  • 0.75 cup pumpkin puree
  • 0.25 cup whole milk
  • 0.5 cup toasted pecans (chopped)

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, brown sugar, baking powder, cinnamon, nutmeg, and salt.

Step 3

Cut the cold unsalted butter into small cubes, and using a pastry cutter or your fingertips, work the butter into the dry ingredients until the mixture resembles coarse crumbs.

Step 4

In a separate bowl, mix together the pumpkin puree and whole milk until smooth.

Step 5

Add the wet mixture to the dry ingredients and stir until just combined. Do not overmix.

Step 6

Fold in the toasted pecans gently, ensuring they are evenly distributed.

Step 7

Turn the dough out onto a lightly floured surface. Pat it into a 1-inch-thick rectangle, being careful not to overwork it.

Step 8

Using a biscuit cutter or the rim of a glass, cut out biscuits and place them on the prepared baking sheet about 1 inch apart.

Step 9

Re-roll the scraps of dough as needed and cut out more biscuits.

Step 10

Bake in the preheated oven for 13–15 minutes, or until the biscuits are golden brown on top.

Step 11

Remove the biscuits from the oven and allow them to cool slightly before serving warm. Enjoy with butter or a drizzle of maple syrup if desired.
