Ingredients

  • 4 pieces fish fillets (such as cod, tilapia, or haddock)
  • 1 cup pecans
  • 0.5 cup Parmesan cheese (grated)
  • 0.5 cup panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 large eggs
  • 0.5 cup all-purpose flour
  • 2 tablespoons olive oil or unsalted butter
  • 4 pieces lemon wedges (optional, for serving)
  • 2 tablespoons fresh parsley (chopped, optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease it.

Step 2

Place the pecans in a food processor and pulse until they are finely chopped. Be careful not to overprocess into a paste.

Step 3

In a medium-sized bowl, combine the chopped pecans, Parmesan cheese, panko breadcrumbs, garlic powder, paprika, salt, and black pepper. Mix well to create the coating mixture.

Step 4

In another bowl, beat the eggs until well combined.

Step 5

Spread the flour on a plate or shallow dish.

Step 6

Pat the fish fillets dry with paper towels and dredge each fillet in flour, shaking off the excess.

Step 7

Dip each floured fillet into the beaten eggs, ensuring it is fully coated.

Step 8

Press the fillet into the pecan-Parmesan-breadcrumb mixture, coating both sides evenly. Gently press the mixture onto the fish for better adherence.

Step 9

Heat the olive oil or butter in a large skillet over medium heat. Once hot, carefully add the coated fillets, cooking for 2–3 minutes on each side until golden brown. Work in batches if necessary to avoid overcrowding the pan.

Step 10

Transfer the seared fillets to the prepared baking sheet and finish cooking in the preheated oven for 10–12 minutes, or until the fish is opaque and flakes easily with a fork.

Step 11

Remove from the oven and let rest for 2 minutes.

Step 12

Serve the fish fillets with lemon wedges and garnish with chopped fresh parsley, if desired. Enjoy!
